Mama Rosa's "Quick Chicken and Prosciutto Dish!"


spinach, thin sliced prosciutto,
chicken breast strips, spices,
parmesean cheese, fresh lemmon

Clean breast chicken strips.

Place in bottom of dish, then place sliced prosciutto on each strip.

Place spinach on top, add diced garlic, a dash of pepper, salt and oregano.

Roll strips up with ingredients inside and seal

by piercing toothpicks through chicken and prosciutto to hold together

Add some olive oil to pan, add chicken/prosciutto to pan

and let them brown 2 minutes on each side.

Pour in chicken stock (or wine), add a touch of lemon juice.

Let simmer for 10 mins.

Be sure to use the wonderful juices as your sauce!


Tender Chicken Squares


1 lb lean groud chicken
1 cup finely chopped mushrooms
2 tbsp finely chopped onions
3/4 cup soft bread crumbs
1/2 tsp dried basil
1/2 dried thyme
1/8 tsp salt
1/8 freshly ground black pepper

Preheat oven to 400 degrees farenheit. 

Combine all the ingredients in a bowl. 

Pat mixture into a greased 8-inch (2L) square baking pan. 

Make into small squares.
Bake in oven for 20 minutes, or until chicken is well done and juices run clear. 

Remove and cut into small squares.
Makes 48 squares.



1 lb. sausage
1 cup ea. of chopped green pepper, celery, & onions
1/2 cup slivered almonds
2 cans of chicken broth
1 1/2 cups rice (not minute rice)
Brown sausage & drain.

Reserve fat, saute celery, green pepper, onions in 1/4 cup of fat.

  Turn sausage, vegetables, almonds into 3 qt. baking dish.

  Add rice and broth, mix well. 

Bake at 350 degrees for 1 1/2 hr. or until liquid is absorbed.
