Italian Potato Fingers

Ingredients:

1 lb large baking potatoes, about 2

1 tbsp Italian dressing
1 tsp olive or vegetable oil
1 tsp grated Italian cheese
1/2 cup salsa or spaghetti sauce (for dip) - optional
 
Heat oven to 400 F. 

Spray pan with nonstick cooking spray.

Cut potatoes lengthwise into wedges, place on pan.

Mix dressing and oil until blended.

Brush potatoes with dressing mix. 

Sprinkle with cheese.

Bake 35-45 minutes until potatoes are tender.

Heat sause and serve as dip for potatoes.
 
High in vitamin c and iron.
